Who says that Mingo Meals are only for kids? Certainly not this six footer.
Six years ago, when he still had two human legs, Erik Lacson walked with us several kilometers along shoreline stretches in Leyte and Samar, to document our turnover of Peter Project boats to people who lost their boats to Typhoon Haiyan.
After that, Erik had to pull back a bit because of some medical issues which ultimately obliged him to have one leg amputated. Today, Erik has returned as an NVC volunteer by joining our NVC anniversary Mingoy Food Bus outreach trip.
More than that, we found out that Mingo Meals power his renewed active lifestyle, which includes weights, swimming, and even free diving in open water. He moves a lot more with one human and one artificial leg than most of us who still have both. We’re in awe of how Erik has risen beyond his physical challenges and we’re proud to say that two sachets of Mingo a day are helping him power his powerful lifestyle.
Erik’s Mingo Shake Recipe
With its all-natural, power ingredients of rice, moringa (malunggay), and mung beans (monggo), Mingo is a perfect pre- or post-workout energy shake. To make Erik’s Mingo shake, blend together a frozen banana, a sachet of Mingo (he uses Mingo Choco for added flavor), and some water. Feel free to add your own fruits and even green leafy vegetables. It works!
